try this:

1 C all purpose flour
1 C whole wheat flour
(yes, you can use 2 C of AP flour, but the 1 C of ww flour makes them healthier and I think taste better)
2 T sugar
2 t baking powder
1/2 t baking soda
1/2 t salt
3 T butter
2 C buttermilk
1 egg

mix dry ingredients together

melt butter in microwave safe bowl large enough to add the buttermilk and egg. stir the butter and slowly add buttermilk to incorporate the two. once the mixture is cool enough to not cook the egg, incorporate the egg, then the rest of the buttermilk. add the mixture to the dry ingredients. make pancakes.

This is an America's Test Kitchen recipe, and I make these pancakes every Saturday. My kids like with craisins or fresh blueberries, but also enjoy butterscotch & chocolate morsels. (thy don't get those that often.


We made your recipe today, and Doug kept cruising through the kitchen to swipe one after another, each time saying how good they were. Thanks very much for sharing the recipe with us!


DALE! SO GOOD! I wasn't even eating them with butter or syrup, which is unheard of for me. They were just sweet enough to not need them and so delicious.

Doesn't hurt that Laura knows how to sling a mean pancake, either. :-)
